Casserole type recipes

In this topic I'd like to share and exchange casserole type recipes. Although they are not the fastest dishes to cook, they can be partially prepared ahead of time, which is great for busy families. Also I love to make casserole type dishes when I have company over. I can prepare the entire dish ahead, and I can be with my guest instead of cooking in the kitchen.

Today's recipe is Cauliflower Casserole or "Rakott Karfiol":
Serves 5 adults or 4 adults and 2 small kids.
Ingredients:
- 500 g extra lean turkey ( also can be made of chicken)
- 1 cup of brown rice ( You can use white rice, but this type of dish I use brown rice and my brown rice hater husband doesn't even notices
- 1 medium cauliflower
- 1 large or 2 medium onion
- 1 tbsp vegetable oil
- 3 tbsp (Hungarian) paprika
- salt
- 1/4 tsp black pepper
- 2-3 bay leaves
- 1/2 tsp marjoram
- 1 cup sour cream ( use the regular one)
Preparation:
1. I always start with putting the rice on the stove , because brown rice takes forever to cook.
2. Saute the finely chopped onion in the oil and a bit of water until it is transparent using medium heat settings.
3. Add the turkey (or chicken) and the paprika to the pan and saute 1 minutes. Add salt, pepper, marjoram and the bay leaves and a 1 cup water. Occasionally stir it and add water if necessarily to prevent burning
4. While the turkey is cooking cut the cauliflower into small florets. Cook it in boiling salted water until it is almost tender. Do not overcook it! If it is done before the turkey, just drain it and put aside.
5. Preheat the oven to 350 degrees F (175 degrees C).
6. Layer 1/3 of the cauliflower on the bottom of a medium baking dish. Layer all the brown rice over it. Spread the solid bits of turkey over the rice leaving a bit of the juice behind. Finish it with the second half of the cauliflower. ( Alternatively you can layer as half of the cauliflower, half of the rice, all the turkey, the remaining rice, then the remaining cauliflower).
6. Mix the sour cream with the leftover moisture of the turkey and spread over the top of the dish.
7. Bake it for 20 minutes or until the top start t be golden.
Servings: 370 calories , 40g carbs, 14g fat, 24g protein and 6g fiber if you use the regular sour cream.
( if you use light sour cream, it is 350 calories, and only 10g fat)
