I thought it would be a great resource for all to start Recipe only threads for everyone to add written out / tried out recipes for all to view in one continuing thread. (This is taking a wonderful cue from other groups)

To kick off the Dinner Recipes:

Cauli-Sagna (& my Spagetti Merlot Sauce recipe)

I have been on a kick lately with my low carb version of Lasagna. I am not claiming this as my very own, since somebody probably already thought of this before and my instructions are simple... But it is another great low carb idea to keep sharing. Somewhere out there is a new low carb lifestyler looking for ideas... :smile:

*****Cauli-Sagna

1 serving Spag Merlot Sauce or other no sugar sauce & meat at bottom of bowl (recipe for Spag Merlot Sauce below)
6 oz boiled cauli, riced or chopped small (arranged over top of sauce, to help prevent spattering) ;)
>Nuke for 90 seconds
Top with 1 oz mozzerella & 1/2 oz parmesean cheese.
>Mix well, cheese will melt in cauli & sauce mix. Savor the cheesy goodness.... :bigsmile:
Serves 1
Nutrition depends on sauce used, but my recipe is per above serving:
Cals: 389 Carb: 13 Fiber: 5 Protein: 31 Sodium: 997 Fat: 23 (net carbs: 8)


*****Spagetti Merlot Sauce
1 lb cooked ground hambuger
1 cup canned/drained mushrooms
1 can chopped black olives, 8 tbsp
5 oz Merlot,
1 chopped green pepper
1 chopped large fresh tomato
1 can Hunt's seasoned tomato paste, 10 tbsp
Italian seasonings & garlic powder,

>Let this simmer for a spell/hour :wink: (note: I forgot onions!!!)
Nutrition for my sauce batch per serving: (makes 8 servings)
Cals: 207 Carb: 8 Fiber: 2 Protein: 16 Sodium: 415 Fat: 11

    Spaghetti and meatballs - 5g carbs

    1/2 a bag of shiritaki noodles = 1g carb (I used the meat drippings to flavor the noodles)
    1/4 cup of walden farms tomato and basil sauce = 0g carbs
    Meatballs with parm cheese, oregano, and egg = 2g carbs
    Jalapenos, onions and 1 garlic clove = 2g carb

    I usually don't like the walden farms brand, but the tomato basil sauce wasn't bad.

    Lemon-Rosemary Chicken Breasts

    Ingredients

    1 1/2 tablespoons olive oil $
    1/2 teaspoon salt, divided $
    1/2 teaspoon black pepper, divided $
    4 (8-ounce) bone-in chicken breast halves, skinned $
    1 1/2 cups fat-free, less-sodium chicken broth $
    1/3 cup fresh lemon juice $
    1 rosemary sprig

    Preparation

    1. Preheat oven to 375°.
    2. Heat a large skillet over medium-high heat; add oil. Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper over chicken. Add chicken; cook 3 minutes on each side. Arrange chicken in a 13 x 9–inch baking dish. Bake at 375° for 25 minutes or until a thermometer registers 165°. Remove from oven; cover and let stand 15 minutes.
    3. Heat skillet over medium-high heat. Add broth, juice, and rosemary sprig. Bring to a boil, scraping pan to loosen browned bits; reduce heat, and simmer 20 minutes or until broth mixture measures 1/3 cup. Discard rosemary sprig; stir in remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Serve sauce with chicken.
