Bab's Orange Cranberry Nut Bread

A New England holiday favorite. Makes 1 loaf - 8 slices per loaf. A serving is one slice.
Ingredients -
1. 1 large navel orange (zest and juice)
2. 2 tbsp unsalted butter
3. 1 c granulated sugar
4. 1 large egg
5. 1.5 c fresh raw cranberries
6. 2 c all purpose flour
7. 1/2 tsp salt
8. 1/2 tsp baking soda
9. 1/2 tsp baking powder
10. 1 tsp cinnamon
11. 1/2 c pecans or walnuts
Directions -
1. Set oven to 350* and spray a large loaf pan with butter flavored Pam.
2. Zest the entire orange and set aside
3. Squeeze the orange juice and pulp into a one cup measuring cup, add enough water to make up to 3/4 of a cup of liquid.
4. Beat together the egg and sugar until light
5. Add the orange juice, water and zest
6. Melt the butter and add, mix altogether until well combined
7. Sift the dry ingredients together
8. Chop the cranberries and nuts and add to the wet ingredients, stir to combine
9. Add the dry ingredients in 3 increments, stirring in each until combined
10. Put in loaf pan and bake for 55 minutes
11. Remove from oven, let rest 10 minutes and then remove from the loaf pan.
12. Allow to completely cool, wrap in saran wrap and store in refrigerator.
Cook's Note: This bread makes great gifts. It also freezes really well.
