So, I longed to eat a piece of toto..........anyone has a low fat recipe? Is there anything low-fat in Jamaican food though?

Hi Kaybee,
Unfortunately I don't have a recipe but I would also love to have one. I love toto!0 -
Let us know when you find it...lol0

I think it's just one of those things that you have to eat and think to hell with the calories. I think I have a recipe somewhere but it's not low fat. Maybe you could substitute Stevia for sugar? but the coconut will probably still make it high calorie0

ok by popular demand
it's not my recipe, but it's from a book of Jamaican recipes that I have. Everything else that I've made from the book, has usually been pretty good.
1/4 lb butter
1 cup granulated sugar
2 cups flour
2 tsp baking powder
1 tsp cinammon
1/4 tsp nutmeg
pinch of pimento
2 cups grated dry coconut
2 tsp vanilla
1 egg beaten
approx 1/2 cup milk
1. Grease shallow baking tin and preheat oven to 400F
2. Cream butter and sugar
3 Sieve together flour, baking powder, coconut, cinnamon, nutmeg and pimento. Add to butter and sugar mixture
4 Add vanilla, beaten egg and just enough milk to mix to a stiff dough
5 Spread evenly in greased shallow baking tin
6 Bake for roughly 30 min
7 Cut into 12 squares
Enjoy!0 -
