what to do with left over roast?

I made a 3 pound roast beef the other night which we ate for dinner and I ate for lunch twice all ready! But I think it will be dinner tonight. Does anyone have any ideas for something I can make with it to make it more interesting? It is a bit dry now :-( I am thinking casserole or soup but most of those types of recipes I have are not-paleo

  • I use all my leftovers and meat trimmings, combine with some canned tuna, egg, and a bit of hemp hearts,and make dog food LOL My dog eats GOOD!

    Hmm....I'd probably make some sort of hash. Dice the meat up fine, add chopped onions and any other veg you have in the fridge.

    If I was making a soup, I'd add the roast (chopped) to the stock, add onion, garlic, shrooms, zucchini, nori, cauliflower, or any other veg you got kicking around.

    I seldom use recipes on that sort of dish. I keep chicken, veggie and beef stock on hand and then just go with the flow. The more colors, the more nutrients. ;)
