    I remember that now. So I have read this before. I though it looked familiar.

    The beginning of the article says "Like most vegetarian propaganda..."

    And of course - out of the entire article that is what people target. I just posted in groups. I don't post much in the forums here anymore. I just can't stand reading through them anymore. It's so sad.

    It's not really vegetarian propaganda so much as it is stupid people who just happen to be vegetarian propaganda. There are so many food myths around; a lot of them are obsolete views before research was available; others are just dumb people coming up with folk tales. Like "don't bite your nails - they'll collect in your stomach" or swallowed gum will stick in your gut.

    Even in the primal/paleo camp, dumb people follow advertising hype without checking facts. Like "nitrate free" bacon. Unless you buy it before it has been salted and cured, it has nitrates - sodium nitrate if it's conventional, celery powder and salt if it's 'uncured'. If the meat is pink - it has nitrates and nitrites.

    Oh yes I know.............there are always going to be those that are just sheep following the hype and obviously NOT learning the lifestyle.

    I, though, am very very fortunate to be able to get fresh pork belly before it has been cured or anything and have the farmer slice it for me and I can go home, freeze some and cook the rest. No sodium issues or anything. That is fresh of the fresh!!

    That's how we do it as well. I guess the butchering term for it is 'green bacon'. Just so you know, not just the belly is used for American bacon; the side pork can also be used.

    Since it goes into the freezer, it doesn't have to be cured...you can add the right amount of saltiness when you cook it...and (other than color) there is basically no difference compared with SAD bacon. After all, you can't taste PINK. :)
