Bab's Ginger Muffins

Heard a shout out today from MsLoves for a good ginger muffin. Just happen to have one....I love this recipe because it uses both fresh grated ginger and finely diced candied ginger. In fact, I think I will make some tomorrow! I like to make a double batch and freeze some for later. They freeze really well.
Bab's Ginger Muffin
Ingredients-
1. 2.5 c white flour
2. 1/2 c sugar
3. 2 tsp baking soda
4. 1/4 tsp salt
5. 1 sp ground cinnamon
6. 1/2 tsp ground clove
7. 1 tsp fresh grated ginger
8. 6 pieces finely chopped candied ginger
9. 4 tbsp cold butter
10. 1/2 c dark molasses
11. 2 large eggs
12. 3/4 c buttermilk
Directions- Preheat oven to 350*
1. Combine all dry ingredients
2. Cut the cold butter into the dry ingredients
3. Combine wet ingredients
4. Stir into dry ingredients (do not over mix)
5. Spray muffin tin with Pam and distribute batter
6. Bake about 15 minutes or until done
7. Let cool in the pan about 10-15 minutes
8. Remove to cooling rack
