Baked Eggs in Bacon Rings

This is a favorite breakfast receipe I like to modify with what ever I have in the fridge. I often add mushrooms, peppers, chopped ham, spinach or what ever leftovers are handy.

Baked Eggs in Bacon Rings
6 strips bacon
melted bacon fat or coconut oil
4 slices tomato, each about 1/2 inch thick
4 eggs
pepper to taste
chopped onions

Preheat the oven to 325. Cook bacon in a skillet over medium heat until it
begins to shrivel, about 3 minutes. Remove from heat. Brush 4 cups in a
muffin tin or 4 small ramekins with bacon fat or coconut oil. Place a tomato slice in the
bottom of each cup. Circle the inside of each cup with 1 1/2 strips of
bacon. Break an egg into each muffin cup and season with pepper. Can add
chopped onions. Fill any unused tins with water to protect them from
burning. Bake in the oven for 20 minutes. To serve, loosen the edges of the
eggs with spatula and transfer the eggs to plates. Serves 2.

    Oh no way! That sounds absolutely amazing! I'm going to pick up some bacon today so I can have these for lunch tomorrow.

    sounds super yummy, but question, can you refrigerate them i'd love to have a quick grab and go bfast and this looks perfect or are they not as stable?

    Pan seared wild salmon portion in a mix of coconut oil and butter with thyme.
    A side of scrambled eggs made on cream with a little fresh basil.
    Tonights dinner!

    I didn't have any tomatoes when I made these this morning, but I did add some chopped green peppers. SO good. Thanks for this recipe. :)
