Ham Bone ?

I bought a Trader Joe's spiral cut ham for Christmas. It was nitrate free but did have a sugar glaze and about 500 mg sodium per serving. I was careful to eat a serving only at a time because I tend to blow up from a lot of salt.

Now I am wondering about making some kind of a soup or bone broth? I always used to make split pea soup but want to make something paleo this year.

Do you think the broth would be just too salty and or sugary to be healthy?

Any paleo soup ideas? was just planning on throwing in some veggies to the broth.

    That's how I'd do it.

    If you are cooking the hambone in a quart of water (or more) the sugar/salt is diluted enough that you'll probably add more seasonings anyway. Go for it.

    I usually just clean out the fridge - I consider soup an 'underwater salad'. Carrot, celery, bok choy, zucchini, kale, water chestnuts, bamboo shoots, shrooms - whatever you've got in your fridge at the time.
