Favorite Hiking Recipes/Food

We are taking our Boy Scout troop on a hiking trip for the three day weekend next week. In the midst of drying veggies in my oven and making out shopping lists for myself, my husband, and my youngest son, I am curious to know what your favorite hiking recipies or foods are.

do you have a car-accessible "base camp" or are you hiking all of your food/cooking equipment in with you?0

It's a 2 1/2 mile hike from the parking lot to the base camp and the area is so remote we don't even have cell phone coverage out there. The other main issue is water. We only have what we can hike in or we have to treat what we can find (the last time that happened it looked like tea AFTER being treated).

First: i highly recommend a Katadyn water filter (or similar) or Aqua Mira 2-part water purification drops
Second: the food! I enjoy instant oats, stove-top stuffing, flavored couscous and things like that that are very lightweight and basically only require boiling water to be added to them. Adding some small dehydrated veggies to a flavored couscous would be very tasy, i'm sure! I've done Flat Out Wraps with peanut butter, real strawberries and wrapped them tightly then wrapped in plastic. You can do several of them. They last for several days without refridgeration and are fairly immune to the "smoosh factor". I like granola, nuts, craisins, banana chips, dates, m&ms, etc for trail food as well as Target's Archer Farm's organic fruit strips. Then there are the rice cakes w peanut butter, which are bulky but indestructable, lol and very light weight. You'd be wise to pick up a few Mountain House dehydrated meals: i really liked the beef stroganoff variety. They cook right in the pouch. You might consider some higher-protein bars because its hard to get good protein sources out there and the protein will help keep you feeling fuller. Oh, that reminds me: Better Oats makes a variety called Chocolate something or other... If you mix a little peanut butter in that its fabulous and has that good fat/protein/carb mix that keeps you feeling full. I even liked the strawberry oats w pb... was like a pb & j. Some ppl like dried meats like jerky. I don't so thats really up to your taste... if i think of more, i will post again0 -
Sounds like a great time! I definitely have fond memories of my first few backpacking experiences from childhood.
Some of my stand-bys: I love beef jerky for a snack and as part of lunch. It's very energy dense. And of course Trail Mix. I used to make my own, but tend to just buy from Costco when I'm home in the summer. Instant mashed potatoes are easy to cook and can add some substance to a dinner. I definitely like the idea of freeze-dried meals that are easy to cook. Pour in the boiling water. Clif Bars are a staple in my pack now also.

One thing I just thought of while looking in my cabinet.
I take some powdered Gatorade to add to the treated water. I don't really load it up like a full-on Gatorate for a long hike, but just enough to take away the iodine taste from my water purifier. You could use Crystal Light or any other powder drink instead.0 -
I've been doing this for 15 years now, my husband and oldest son are Eagle Scouts, my youngest is working on his Eagle Project and last two merit badges.
I was just curious what your favorite meal, trail comfort food is. I mix a package of pudding with powdered milk, add water, and have chocolate pudding on the trail. It's really good if you crush cinnamon graham crackers and mix it in with mini marshmallows.
I am excited about going and can't wait. This will be the longest time I have been on the trail.0 -

here is a pic from a 2010 camping trip -- base camp was near Marcy Dam (Adirondacks) and we hiked Mount Marcy the day prior. Note the tired looks haha!
In the photo: our Jet Boil stove , our bear canister where we had to pack all of our food and cooking gear (its required in that area), a luxury fresh apple (how we had this still on Sunday morning is beyond me! It was a space hog!), and from the plastic baggie on my lap, i am assuming we are making coffee or oatmeal --- oh, and i second the idea of powdered Gatorade, Camelbak Elixer or Crystal Light Pure if for no other reason that to switch things up a bit!

Thanks for the help with the pics. As you can see, the only change in terrain is below the water table (the hammocks are where the trees are). I am REALLY hoping to go back to the mountains this summer.
Pudding recipe:
1 3oz package chocolate pudding
2/3 cup powdered milk
1/4 cup mini marshmallows
Place this in a zip lock bag. On the trail, add 2 cups water and squish until pudding thickens. Splits easily for 2 people, but you don't have to share :bigsmile:
I add the graham crackers, but it is also good with toasted walnuts, peanuts or almonds, almost anything you would like with chocolate.0 -

Gonna try that chocolate pudding trick without the marshmallows (not crazy 'bout them unless they are in rice crispy treats! --- which by the way would make EXCELLENT hiking nibbles! yum!0 -

poptarts: my guilty pleasure! Even if they crumble all to hell, i unzip the bag and dump the crumbles in! If my hands weren't filthy, i'd probably lick my finger to get the tiniest of crumbs to stick to it and stick it in my mouth hahaha :noway: i know that sounds so soooo wrong! :laugh:0

A comfort food for me (although mostly for day hikes) has always been summer sausage, cheddar cheese and Ritz crackers, along with a crisp apple. This was the lunch my dad and I always shared on our hikes when I was a kid. Nothing but great memories!
And I'm stealing your recipe for pudding also. My only problem is it will be hard to find the ingredients here in Romania.0 -

When I take my scout troop hiking we have a few stand-byes that we usually go to. Made for being full of energy, not needing that much water or effort on behalf of the kids (who is completely responsible for their own cooking) and light to carry.
"carbonara": Cook spaghetti according to the packet. Fry bacon and leek. Pour cream (or philadelfia if you can afford it) over the cooked pasta. Mix in bacon and leek and a butload of black pepper.
"Sluring": Mashed potatoes (use instant if you want, so light to carry and demands very little fresh water), with leek, bacon and mushroom chopped in.
Chili con/sin carne w. rice
Noodles with fried veg. Make it "luxury" with some canned baby corn and beansprouts.
When going on longer trips, where you the demand for tasty food goes down as the need for cheap, light and easily prepared food goes up, we sometimes use those soupmixes that are like powder, cook them with way to much water and then let some pasta cook with them.
I hope maybe you got some idea from some of this. I know I got some good tips in this.
Oh, and Make sure you bring snacks and stuff for the kids, to keep their motivation and energy levels up for the hike. Cookies usually does the trick for us!0 -
Oh yes. We are very much a high adventure group, so we know a lot of the tricks. BUT it's always neat to see what other people do for fresh ideas.
