    Tonight, grilled steak with grilled yellow squash and onions.

    Has anyone here ever tried ****aki noodles? They are supposedly zero carbs, and come in the fashion of fettucini and angel hair. Is it good? I saw a spot on TV for them, but haven't been able to locate in stores!

    Well, it's shrove Tuesday (In the UK..... not sure if this is the same in the US) which means it's Pancake Day!!

    UK pancakes are pretty different to US ones- more like crepes really. We have big plate sized ones! Tonight I'm going to attempt some savoury filled pancakes followed by a sweet one for desert.

    I'm going to use the following ingredients:

    Savoury:

    Soy flour
    pinch baking powder
    egg
    Double/heavy cream let down with a splash of water
    salt & pepper
    Butter & evoo- to cook in

    Cooked & stuffed with shredded chicken & mushrooms in a cheesy herby sauce, folded over and topped with cheese and grilled (broiled) until bubbling.

    Sweet:

    Soy flour
    pinch baking powder
    egg
    Double/heavy cream let down with a splash of water
    1/2 tsp splenda
    1/2 tsp unsweetened cocoa powder

    (to be served with a little whipped cream)

    Fingers crossed, the soy flour will work!!

    Here's the wiki link to what a shiritaki (AKA Yam noodle/ Itu Konnyaku noodle) is. http://en.wikipedia.org/wiki/Shirataki_noodles

    Traditional shiritaki/konnyaku are made from the konjac yam and are very low in calories, and high in fibre. They are not carb free, although they are pretty low (typically 7g per big serving). They are usually cooked in asian dishes, like soups/broths/hotpots and stir fries.

    These are available to buy at amazon, or from low carb websites. They are also usually available at oriental/international/asian supermarkets and they are pretty cheap from there.

    They are oftern called tofu shiritaki noodles in the US and there are many websites in which you can buy them from http://www.house-foods.com/tofu/tofu_shirataki.aspx being one of them. They are sold in 'pasta' varieties in the US like fettucini/ macaroni but due to the texture I would be reluctant to use them in any italian style pasta dishes. IMO they are best used for asian style cooking.

    Thanks! I think I'm going to order some, or buy them at an Asian market.
    It would be wonderful to eat like my family when we have spaghetti and meatballs, or chicken alfredo!

    Dinner tonight - Pork Verde

    5 lb pork shoulder roast
    1 can rotel
    1 can chicken broth
    2 jars Herez (or any brand) green salsa

    Put all ingredients in crock pot on low for 5 or so hours, until pork shreds easily. Serve on low carb tortillas or by itself, with shredded pepper jack cheese. Yummy! (and lots of leftovers!)

    1 carb per serving

    Had Chicken Shish kebobs for lunch without the skewer - grilled chick chunks, peppers and mushrooms, a dab of tsitsiki (sp) sauce. tonight, grilled salmon, plain, fresh steamed cauliflower and a giant salad. These are 2 of my favorite meals!

    I have the Miracle Noodles, in fettucini, angel hair and rice varieties. Different texture, but very satisfying! I sometimes crave pasta with broccoli rabe and these do the trick for me - I use olive oil and fresh garlic to sautee the rabe, then follow the directions to prepare the fettucini and yummy!

    I have the Miracle Noodles, in fettucini, angel hair and rice varieties. Different texture, but very satisfying!     How was this pizza crust? I tried the one in George Stellas livin low carb book which uses soy flour this weekend and if I hadn't forgotten a key ingredient (club soda) it would have been pretty good I think...lol

    It sounds so good! I can not stand soy flour, so was looking for an alternative. This has 1.6 net carbs per slice, by itself. :)

    Pizza mushrooms tonight - delicious. Could be even lower carb, but i can't find a decent reduced sugar or no sugar sauce without making my own (and i just don't have time for that right now). Can also reduce the fat by using turkey pepperoni, but i didn't have any.

    psst, for all you low carbies like me, have you tried mama lupe's low carb tortillas? 7 g of carbs. and try Joseph's lavash flat bread, half a slice is also 7 carbs (a full slice is way too big, a serving is half)>> half of one is bigger than 5x7.

    tonight's dinner, stir fry. shrimp, bean sprouts, green onion, mushrooms and about a tablespoon of fat free italian dressing. so yummy. way low cals and carbs.

    Edited to say oops, forgot to mention the asperagus!

    Todays lunch:

    Gem lettuce cups filled with chicken & crispy bacon in a spiced mayonnaise.

    Todays Dinner:

    Moroccan spiced lamb with cauli cous-cous. Serves 2.

    250g minced (ground) lamb
    2 tsp Ras Al Hanout (middle eastern spice blend, if you cannot get this you can make your own simple version by mixing 1/4 tsps of ground coriander, ground cumin, ground cinnamon, black pepper, 1/8th tsps of nutmeg,turmeric,cayenne pepper. You can keep this in a jar and use as little/much as you want).
    1 tbsp tomato paste mixed into 3 tbsp water
    2 cloves garlic, crushed
    1 Medium red bell pepper, chopped
    4 spring onions (scallions/green onions) white & green part, chopped.
    1 handful chopped fresh coriander (cilantro)

    sautee everything in a pan or putin the crock pot.


    Cauli cous cous

    1/2 small head of cauliflower, made into cauli 'cous cous' by whizzing in a food processor (or grating) until fine.
    1 x pinch saffron (steeped in warm water) or 1 pinch turmeric powder. Microwave in a bowl, covered with a plate for 4 mins.
    Salt & pepper
    lemon juice
    chopped coriander/cilantro

    Pizza mushrooms tonight - delicious. Could be even lower carb, but i can't find a decent reduced sugar or no sugar sauce without making my own (and i just don't have time for that right now). Can also reduce the fat by using turkey pepperoni, but i didn't have any.

    I like this idea - I am assuming that you use like a big portabella mushroom cap for the "crust"? do you cook it prior to adding toppings, and how? I'm worried about the moisture that might come out of the mushroom, though. But I've been craving pizza! Sometimes I just put pizza toppings on a salad and while it's good, it's just not the same as something you can pick up and eat! I'm also curious to try the "meatzza" version...

    Coffee and low-carb homemade blueberry muffin
    Spaghetti sauce and low-carb pasta
    low-carb blueberry muffin
    Unsweet tea
    Tuna fish salad with low-carb bread

    That is what my day looks like today. yummy!

    Well, I'm back to what I know. Idk why i bother trying anything else. SMH

    Breakfast: 2 boiled eggs, 4oz mixed veggies, 8oz coffee with creamer - no sweetener
    Snack: 4oz pork shoulder
    Lunch: 6oz turkey neck
    Dinner: 2 beef patties, 2 pieces of lettuce, 2 slices of cheese

    Idk if I'll eat all of this today but this is what I prepared for the day.

    So far today:
    Breakfast: 2 eggs, 3 pieces of bacon, 1 hamburger (I wanted a bacon cheeseburger, but I am curious if cheese is stalling my efforts, so trying to not eat as much of it)
    Lunch: grilled chicken thigh, green beans, a few cashews (have to be careful, I think they have the most carbs of any nut)
    Possible snack: half an avocado

    Dinner: not sure yet, but I've got some options. Leftover chicken thighs or steak, probably over a salad. Salad sounds good now that it is warmer out!

    The original recipe (found on pinterest) did indeed call for the big portabella caps. They are just a little too "meaty" for me, so i used baby bellas (crimini) I don't see any reason you couldn't use regular mushrooms as well. When i saute mushrooms, i get a lot of moisture, but for whatever reason, this doesn't seem to be a problem with stuffed and baked mushrooms. If moisture is a problem for you, you can bake them before stuffing for 5-10 minutes. Sent you a message.

    Breakfast: 2 hard boiled eggs, couple thin slices of salami
    Lunch: leftover green beans & beef short ribs I made in the pressure cooker last night...mmm

    Dinner, I'm thinking a salad, but not sure what I'm going to put on it, yet. Maybe tuna?

    Lunch: Smoked mackrel pate (Made with 1x smoked mackrel fillet, mashed into some full fat cream cheese with some lemon juice & black pepper). served on top of cucumber slices.

    Dinner:

    Swedish meatballs:

    450g/ 1 lb minced/ground pork (or 50/50 beef/pork combo)
    2 egg yolks
    1/4 tsp salt
    1/8 tsp ground allspice
    1/4 tsp pepper
    1/2 tsp onion powder or 1 tbsp finely chopped onion

    combine above and refrigerate for at least 30 mins to firm.

    -Line a baking tray with non-stick parchment, preheat the oven to 180 degrees celcius/ 350 F.
    - Shape pork mixture into small ish balls (a little smaller than a ping pong ball) and place on baking sheet.
    - Bake for about 10 mins
    - Remove and set aside.

    Sauce:

    3/4 cup/ 170ml beef stock/broth
    1/2 cup/ 120ml sour cream
    1/4 cup/ 60 ml heavy/double cream
    1/4 tsp black pepper
    2 tsp chopped dill
    2 tsp parsley

    Combine above in a pan and bring up to a simmer. Add the meatballs and cook for a further 5 minutes.

    Serve with cauli rice/mash, spaghettti squash or low carb pasta.

    I'm loving all of these ideas.

    Today, for Breakfast: 1 egg cooked in smart balance and 3 slices fully cooked hickory smoked bacon and coffee w/cream
    Snack: Weight Watchers smoked string cheese and coffee w/cream
    Lunch: Tuna fish with a little mayo and cucumber "crackers.
    Dinner: Faux Smashed Potatoes (made with cauliflower) and mixed with shredded Parmesan cheese and bacon pieces, and a 3 oz. ground turkey burger.

    I am very satisfied and still full from dinner. All totalled under 1,000 cals.

    Another cauliflower idea. I apologize if this is a repeat, I didn't go through every post. I do plan on doing that, but I have made this and it is delicious. Very surprised that it tastes so good, Cauliflower Pizza Crust. You could make a few of these and freeze them. I didn't make the Hawaiian Pizza, but goodness, the possibilities are just endless! So, so good!

    I'm on atkins induction. this meal day has:
    Calories: 1,365;
    Total carbs: 15; Net Carbs: 11
    75g of Fat
    150g of Protein

    breakfast: 2 egg omelette with 10 g onions, 1/2 oz red bell pepper, 1 oz baby portabello mushrooms, veggies sauteed in 1/3 tbsp of butter, 2 oz of ham, and 1 oz of smoked cheddar cheese - and a diet dr pepper

    lunch: 8 oz wild caught salmon, pan-seared in 1/3 tbsp of butter (and a little dill seasoning and garlic powder), 1 cup (84 g) of zucchini sauteed in 1/2 tbsp of olive oil and tossed with 2 tsp of grated parmesan

    snack: 2 weight watchers smoked string cheese sticks

    dinner: 6 oz porkchop, 84 g of romaine salad mix, 1 oz of parmesan cheese, and 2 tbsp of caesar dressing

    dessert: 1 sugar free jello cup w/ 5 g (2 tbsp about) of reddi whip
