Hey boys,
Can you tell me if not all whey protein powders can be used for fluff? I have BNRP Proto Whey (see link below for product info):

V2 made this arvo (afternoon) worked better than V1 however I thought it would be of a more creamier consistency (made with frozen mixed berries) and doens't look exactly like the pix you guys have posted. It's in the freezer now so the taste test still remains.
Thought perhaps my WPI was not fluffable as I checked below site for protein powders and mine is not listed:

Can you list the measurements and ingredients that you used? I know that the Xantham Gum was essential to fluffing the Optimum nutrition whey, but was not needed for the Xtreme formulation casein.0

I would be interested in the details like Nick indicated.
Also, I am pretty certain that with additives (Xantham Gum, Guar Gum, Vinegar, Salt) any protein powder can be utilized.0 -
OK I think this was what I used:
pinch salt
3 egg whites
1/2 cup trim milk
1 scoop BNRG Proto vanilla WPI
300g frozen mixed berries
Add pinch of salt to stainless steel bowl
Beat egg whites until fluffy and stiff peaks form with hand held blender
Mix milk, protein and frozen berries in a separate bowl for like 10 mins
Fold in milk/protein/berry to beaten eggs
Certainly made more than my 1st attempt but didn't look anything like the creamy fluff you guys have posted in pix. Taste was nice - a bit like sorbet.
I have xantham gum but forgot to add it - doh! :blushing:
Watched some YouTube vids of a guy making with protein powder, milk, egg whites and fruit then blended for like 10-15 mins which turned out like the fluff you guys made.
I don't have a powerful mixer but only a stick blender or hand held beater. Does this make any difference?

OK V3 was an utter disaster AGAIN. **** I'm getting frustrated
Recipe was:
pinch of salt in s/steel mixing bowl
3 egg whites
beat for 1 minute
add 2 drops lemon juice and 1/4 tspn xantham gum
beat for 3 mins
OK I was looking pretty good here. Fluffed up nicely, just like a pavlova base.
Folded in 40g BNRG Proto WPI but then it looked like pav mix with small lumps of vanilla protein powder. So, I made an executive decision to beat some more hoping this would blend it through but no, it just totally lost all the air and became a liquidy mess that ended up being thrown down the sink :grumble:

Try once more and keep it basic, 1 scoop of powder, 1/2 tsp xantham, 200 grams of mostly frozen berries and 1/2 cup milk. Mix with spoon till everything is wet then hit with hand mixer on high for 10 minutes. The frozen berries are very important to making this work if they are too thawed before you start it wont fluff.0

Thx Nick. I had success late last week with Optimum Nutrition Caesin - seems my Proto WPI is not flufflable.
Have made and eaten 2 batches so far - berries and plain (cookies & cream caesin) so HAPPY HAPPY HAPPY!
Now, all I need is a great ice cream recipe from _Bro...

Glad you got it sorted
Stand mixer is the go. Takes a good 10mins with mine. I'm not standing there for 10mins waiting :P It's so damn noisy though!
I've used Bulk Nutrients whey & casein before. No probs with either.0
