Vegetable Pizza
Ingredients:
1 pkg IP Plain crepe
1 tsp olive oil
1/2 clove garlic - minced
italian seasoning to taste
1 egg white
1/3 cup water
1-2 tbsp red bell pepper sauce
vegetables of your choice (I also like to add Turkey Pepperoni)
salt, pepper, red pepper flakes to taste
Red bell pepper sauce (If you don't like peppers -- like me -- try the Walden Farms Tomato & Basil sauce)
Dice 1 red pepper and add to a sauce pan sprayed with non stick cooking spray, cook over medium heat.
Add 1 clove diced garlic, salt and pepper to taste.
Cook for about 5 minutes then add about a 1/4 cup of fat free chicken broth or water.
Cook for about 15 minutes until peppers are soft, add more water to keep from going dry.
Cool slightly and process with a hand blender or blender until smooth.
Prep:
In medium bowl; mix water, olive oil, garlic, Italian seasoning and egg white. Add crepe packet and whisk well. Cook crepe in skillet. Spread bell pepper sauce on crepe. Top with favorite veggies. Season with salt, pepper, red pepper flakes, italian seasoning to taste. Broil in oven, watching closely until vegetables are nicely grilled, about 5 minutes.
