Paleo Breakfast Casserole

Hello there! I just found this group and decided to post this recipe for paleo breakfast casserole that I have adapted from Robb Wolf's site. This heats up really well, so I like to make it at the beginning of the week and eat it every day. Sometimes I add sausage (though I'm trying to find a better brand than I am currently eating) or whatever veggies I am feeling like when I make it.

Paleo Breakfast Casserole
10 eggs
2 carrots, shredded
2 zucchinis, shredded
1 large sweet potato, peeled and sliced thin
1 tablespoon coconut oil
8 pieces of bacon (or enough to cover the top of the casserole)
splash of heavy cream (optional, if you do dairy)
Salt, pepper, oregano, red pepper flakes (or whatever spices you think will taste good!)

1. Grease a 9x13 pan with coconut oil. Preheat oven to 375 degrees.
2. Line the bottom of the pan with thinly sliced sweet potato
3. In a bowl, mix spices and shredded veggies.
4. Whisk eggs in a separate bowl, add cream, and stir into the veggies.
5. Pour egg mixture into the pan. Cover the mixture with bacon.
6. Bake for about 40 minutes, or until eggs are set and bacon is crisp. You may want to finish with a quick broil if you like crisp bacon.
