raw whipping cream

Anyone else tried raw whipping (or heavy) cream in their coffee or otherwise? I got some from a local store and it is very, very thick, much more so than I am used to with the organic stuff I usually buy. It also seems to have a slightly sour note to it (like yogurt) and I am wondering if this is normal? Or has my cream gone south even though I just bought it yesterday?

Hmmm. Can't help you, myself. We no longer use cow dairy - the wife puts coconut milk in her coffee now.
Raw milk is simply unpasteurized. Texturally, it shouldn't be any different - unless it should say 'cultured' on it somewhere, in which case probiotics have been introduced much like yogurt. I know Nancy's Organics offers items like cultured cottage cheese (I didn't like it - tasted like it 'went south' as you say), so you might check that.0 -
...its because raw dairy is not homogenized. So the fat separates out. That's my guess. I've never gotten raw cream, but I've gotten raw whole milk to make kefir, and it was *thick* and a little lumpy. I suspect cream is even more so, because there is more fat to separate.
About the *sour* not, I really can't say. There's no reason why being raw would make it more sour that I can see. In fact, the greater amount of fat and lactose should give it a sweeter note. But, milk tastes like what the cows eat (that's why Irish dairy tastes so sweet.) Unpasteurized winter milk may just taste different. We just never usually taste it because ultra-pasteurized milk is dead.
I guess the only way to know is to buy it again and see if its the same...or call the store and see if anyone else has complained. If regular buyers noticed that the cream was off, they might be more likely to complain.

Raw cream is much thicker and to me tastes better. Mine doesn't usually take sour though, it is slightly sweet.
I get my cream from a local farmer, not the grocery store, so it is probably still homogenized and pasteurized.0 -
Thanks for the help everyone! I may have to try again with it and see what it tastes like. NatureMade, it is actually raw which is pretty cool. It was from the local health food store and is from a local farmer. Luckily, NH doesn't have any crazy laws about selling raw milk0

Oh ok. I didn't catch that earlier. I am able to get Raw milk, cheese and butter here in Illinois too. I love living in farm country here in the Midwest.0
