Anyone have quick breakfast ideas?

Hello! I've been doing Paleo for two weeks now through a Paleo Challenge at my Crossfit gym. I am getting a little tired of a banana and coffee when I am on the run and don't have time to sit down to eat a full breakfast. Any tips?

Hi there! I just joined this group and this is my first post! Anyway, I eat organic apple slices dipped in almond butter every morning for breakfast. Seems to keep me energized throughout my morning workout--I do boot camp rather than CrossFit; it's very similar although we focus a lot more on running/cardio. Anyway, being a mom of 3 kids, a fitness instructor, and a full-time student, I don't have a lot of time for breakfast so the apple/almond butter seems to suit me.0

When I cook in the evening, I often have a side pan going for something to eat in the morning. It's easy to just toss an egg in the pan for eating the next morning., or I'll hard boil one. Also, you can cook bacon in the oven while something else is cooking. I've eaten leftover salmon and other things for breakfast as well. I'll make a couple of things and put in a container to pop in the microwave the next morning. It's quick enough for me.0

I would love to have ^^this^^ much variety for breakfasts! Unfortunately, I don't like eggs or seafood--I really tried to stomach them for a while to see if I could get used to the taste, but I just couldn't do it! So my breakfasts are usually kind of limited. I do occasionally have some bacon, avocado, and tomato wrapped in Romain lettuce for breakfast or a snack. Pretty tasty! But I do like the idea of adding a little something in the oven at night to eat in the mornings--thanks for the tip!0

You're welcome! Anything you can think of to prepare at night while you're cooking dinner anyway will always make it sooooo easy the next morning. There are lots of things that I can't stomach in the morning either.... for me it' fruit. I don't know why, but fruit in the morning gives me a yucky feeling. I have to eat something kinda fatty I guess.0

I do exactly this. It is a super time saver and it gives you a nice supply of protein and fat for the morning. Nice and filling.0 -
I made some homemade lara bars recently, those a great for a busy morning and keep me full for hours (kind of a lot of natural sugar, not sure how you feel about that): http://ibuyflour.blogspot.com/2012/01/banana-bread-lara-bar.html
Also:
Paleo Breakfast Casserole
10 eggs
2 carrots, shredded
2 zucchinis, shredded
1 large sweet potato, peeled and sliced thin
1 tablespoon coconut oil
8 pieces of bacon (or enough to cover the top of the casserole)
splash of heavy cream (optional, if you do dairy)
Salt, pepper, oregano, red pepper flakes (or whatever spices you think will taste good!)
1. Grease a 9x13 pan with coconut oil. Preheat oven to 375 degrees.
2. Line the bottom of the pan with thinly sliced sweet potato
3. In a bowl, mix spices and shredded veggies.
4. Whisk eggs in a separate bowl, add cream, and stir into the veggies.
5. Pour egg mixture into the pan. Cover the mixture with bacon.
6. Bake for about 40 minutes, or until eggs are set and bacon is crisp. You may want to finish with a quick broil if you like crisp bacon.
Cut into 6 pieces, wrap in plastic wrap, keep cold, and heat for 2 minutes in the microwave in the morning0 -

mmm... the breakfasts on that website look delicious! I'm trying to cut back on my sugar right now, just until I lose the few extra pounds I gained over the holidays, and then I will give them a try for sure!0

Another one:
Get a muffin pan. Fill each with eggs and toss in whatever "toppings" you want.... each one different. Bake for 25-30 minutes. (I can't remember the temp) Now you've got an egg muffin for everyday of the week..... okay maybe 6/7 days if you have a small pan.0 -
350 is pretty typical for the egg muffins.
One of my favorite dishes is sauteed spinach with trout or salmon. Not traditionally "breakfasty" as such, but it's darn tasty! Think outside the egg!0
