Dilemma! (Long-ish)

Hey everyone, so I am having a slight dilemma with my diet.

Let me start by giving a little background: I am in my late 20's and was diagnosed with type 2 diabetes at 21. After seeing a few doctors and taking multiple tests, my dr. settled on type 1 diabetes instead. I have huge insulin resistance and after getting an insulin pump almost 2 years ago, was using approximately 150 units of insulin a day (which is a ton!), my blood sugar was never really under control, and I struggled to stay within my target every day.

At the beginning of the year, I decided to try the South Beach Diet. I've been on phase 1 for 3 weeks (entering my 4th week tomorrow) and I'm TERRIFIED to move on to the next phase! My blood sugar is completely normal right now, I only use about 90 units of insulin a day, and I'm losing over 3 lbs each week. So why move on to phase 2?? If it isn't broke, don't fix it right?

The only problem I'm having is that I can't stand the sight of another egg. I'm so bored eating salad after salad and steak after steak. If I don't eat a piece of fruit or a whole grain English muffin, I might explode! But I'm scared that once I incorporate fruit and whole grains into my diet, my blood sugar is going to go crazy and it will never be under control (extreme, I know). What's a diabetic girl to do??

    CONGRATULATIONS! !!! on the amazing results! I'd say move slow and work with that doc! Also know that if you need to stay at the low end on carb, there are some great recipes to substitute for those foods you miss. And congrats again for managing the diabetes so well that is fantastic.!!

    Here read this article and view the video. I think you might find it helpful. I think if you use less insulin and are losing wieght why change but I am not in your shoes.

    I try to cut back on most sugars, I eat very little fruit and stay away from bread if at all posssible. when I stay low on carbs yes I do lose weight. Trying very hard to stay on track but it is difficult.

    slowly try to add something back in. add a piece of fruit a day for a week and see what your numbers do. the next week add something else. and just keep an eye on your numbers. have you seen a nutritionist for your diabetic diet yet? i see one once a year and she adjusts my diet as to my weight. for me she wants me to watch carbs and calories. i watch one or the other. i need easy.
