I made some really yummy Blueberry Streusel Muffins today. I didn't have any regular milk so I used coconut milk, didn't change the flavor or consistency of them at all so I was glad for that. My problem is the streusel topping. I don't know why but every time I make something with a streusel topping it just falls off and doesn't stick to the muffin, bread, cake or whatever.
So for the topping I used 1/4 c flour, 1/2 cup oats, 2 tsp flax seeds, 2 tsp wheat germ, 4 Tbsp butter, 1/4 c brown sugar and worked that all together with my fingers until it was crumbly. I even added a bit more butter than the recipe called for to be sure the topping was nice and moist when I put it on top of the muffins. They looked beautiful while baking, rose up nicely but sure enough. I get them out of the muffin tin and the topping just falls off. What the heck am I doing wrong???? I was thinking of maybe trying to add some honey or agave and maybe it would stick better next time.

Does anyone have a successful streusel topping that does not fall off?

I've wondered about that too because I've had that trouble.... Maybe we are putting too much on? Try smashing it in some...

You mean just a little falls off or the whole thing? Some will because has happened to me. I try to do as Ms LOves and smoosh a little in the batter.

Try chilling the streusel before putting it on your batter. So make the streusel first, chill, make your batter. Sprinkle the streusel on top of batter and gently push the streusel into batter.

Thanks for the tips. I will make these again soon and chill the streusel and push it down into the batter next time. Will let you know how that works.
