Today's challenge is: Eat those fruits and/or veggies!

Fruits and vegetables contain essential vitamins, minerals, and fiber that may help protect you from chronic diseases. Compared with people who consume a diet with only small amounts of fruits and vegetables, those who eat more generous amounts as part of a healthful diet are likely to have reduced risk of chronic diseases, including stroke and perhaps other cardiovascular diseases, and certain cancers.

So lets try to get in at least 2 fruits and 2 veggies today :)

    I had a medium apple for breakfast :) It was delish and I didn't even have to smother it with peanut butter :P

    this is a great challenge! On another day, we should make this same challenge, but by color... I.e 2 greens and two orange. Those colors are more than just something pretty on your plate!

    I like that idea! We can call it a rainbow challenge and try to eat at least 3 different colored fruit and veggies and a total of 5 for the day. :D

    I'm constantly working on fruits and veggies! This time of year can be difficult to find any fresh stuff in the northern climates!

    I have a freezer stocked with stuff I put up last summer, but it's just not the same as fresh!

    It is tough and definitely not the same as fresh! I'm lucky that I live in Florida and can get fresh produce most every month of the year. Spring and Summer will be here soon :)

    I lived in Gainesvill FL for a while! I do miss that produce - but am glad to be far away from gators, sink holes and the Klan!

    Enjoy that fresh produce for me!

    I made a bunch of apple sauce last year and froze it. It's just basically cooked and smashed apples. No sugar or anything. Does this count as fruit? I could buy an apple, but I have some in another form in my refrigerator waiting to go to work with me!

    I was born and raised in Inverness, FL and just moved from Ocala :) Now I'm near Orlando and the big city is quite a shock for me LOL

    I'd say it definitely counts as a fruit :) Strawberry Ice Cream? Not so much ;)

    I think I'm going to saute some asparagus for lunch :)

    Locally grown produce is hard to find up here this time of the year, however our stores are still stocked with wonderful fruits and veggies grown right here in the USA. I shy away from things grown out of the country because 1) their regulations are much more lacks than what we American farmers must follow (chemicals used, field regulations etc) 2) I prefer to buy american to support my fellow farmers and keepy money in my own economy 3) I know what we do here, and what's better than American grown!

    Figured I better follow up: I mean NO disrespect to anyone from another country with my pro America stance. The subjects of American farming is one that is very personal to me and my emotions run strong on that one. We all have those in our lives. Lol. If i've stepped on toes or have offended, please except my apology.

    Normally I have a protein shake for breakfast, which pretty much takes care of my veggies and fruits servings for the day; although today I changed it up a bit and had eggs instead; I'll share my recipe;

    Super green
    3-6 cups of baby spinach
    1/2 frozen 100% juice (apple, but you can use what u prefer)
    1/2 cup peaches
    1/2 cup mangos
    1/2 pineapple
    1 banana

    Also I use various type of supplements;
    Raw nutrient dense powder
    Rice protein powder
    Fiber
    Flax seeds
    Green essentials

    Very good smoothies, I am addicted!

    I'm with ya! I do a worker share on an organic farm in the summer. Food Tastes better to me when I take it out of the ground myself! But not much grows in Wisconsin this time of year. I have apple sauce and jam today with my lunch - but sadly the actual raspberries and apples won't be back for a while. For dinner tonight, I'll have a quinoa pilaf with corn and tomatoes from the farm.

    You did not sound offensive!

    All this veggie talk is making me hungry! For lunch, I'm having a veggie and lentil soup that I froze at harvest time. Yum!

    Well I had every intention of getting both the fruits and the veggies in. I have the fruit covered hands down. My apple this morning and a fruity milkshake (instead of cake) tonight for my daughters birthday party.

    I have homemade split pea soup in the crockpot right now. Its been cooking since 2, but not even close to being done so I can't have it for dinner tonight. Mother-in-law ordered pizza so I'm going to have 2-3 slices of it (its cheese and green/red peppers with light sauce) I'll make up my veggies tomorrow with soup (yum!)

    Thats a really good idea, 1st goal is still 50K vertical feet, 2nd goal is 100K
