I ate very, very low carb yesterday (and very high-fat). I had the carbs from my "almost a cup" of full fat greek yogurt and the carrots, celery and onions in the crock pot roast I had yesterday evening. And my Sunbutter Sunflower butter munching.
This morning my fasting blood sugars registered 101 - which is higher than normal. So, I'm looking around online again.

Chris Kresser views are really interesting. He thinks the insulin resistance that leads to diabetes is caused by inflammation (toxins, high blood sugar levels, PUFA oils, sleep deprivation). It's a combination of factors that all play a role. But he thinks the main cause is inflammation. It's just so interesting to read all the different views on cause and effect and symptoms. I enjoy his responses in comments, too.

Yes, from what I have learned, read and researched I agree.
It is also possible that the carrots and onions had something to do with the slightly elevated blood sugar numbers as they are higher in natural sugars and the sugar concentrates more as they are cooked.0 -
