Pancake Day

With pancake day coming up (next Tuesday), I wondered if anyone was planning on making low carb pancakes? I made some last year, but they tasted very nutty! Here is the recipe if anyone wants it:

_This recipe is courtesy of Laura Dolson's Low Carb Diets site at About.com.

- 1 cup almond flour (= "almond meal" / "ground almonds" -- all the same thing)
- 2 eggs
- 1/4 cup water
- 2 tbsp oil
- 1/4 tsp salt
- 1 tsp baking powder (not in the original recipe but it was suggested by someone who reviewed the recipe as a way to make the pancakes puffier - and it worked...)
- 1 tbsp low-carb sweetener (i.e. Splenda)

Cook them in the usual fashion. This makes three large pancakes or six smaller ones. Just know that they won't bubble on top in the pan like "regular" pancakes do.

There are six net carbs in the entire batch.

I also found another recipe using cheese that I used earlier this year, I prefer this recipe to the one above, but I had them as savoury pancakes so not sure how they would taste with lemon etc!

These crepes are virtually carb free and are very easy to make.

Ingredients
200 Grams of ricotta cheese
3 eggs
I teaspoon of cinnamon
A splash of milk

Method
Mix the cheese, eggs and cinnamon into a small mixing bowl. Add a slash of milk if the mix is to thick to run freely. Place a small knob of butter into a frying pan, I use a small omelette pan 8". Heat the butter and spoon in 3 table spoons of mix. Fry until firm then turn over and cook for one minute or until the crepe is starting to brown. This mix makes between 6 and 8 crepes. Allow to cool and fill with cream cheese and finely chopped spring onions or smoked salmon and asparagus tips, whatever you like. Roll up the crepe and enjoy. Great at any time and very good for the lunch box or picnics. Also great warmed up with a scoop of low carb ice cream and double cream.

    I'm going to make a batch, but still undecided as to whether I'm going to make sweet ones using ground almonds (served with lemon juice) or chicken & bacon savoury stuffed pancakes using soy flour.

    I might try your ricotta recipe for a savoury one!

    How many carbs are there in soy flour pancakes? Can you get soy flour from Tesco etc? Same as normal pancake recipe but replace normal flour with soy flour? (sorry for all the questions!) :)
