Pomegranate Glazed Salmon :)

For the Salmon
1.5 lb skinless, boneless salmon fillets
1/8 cup soy sauce
1 tbls olive oil
1 tbls fresh lemon juice (about 1/2 lemon, squeezed)
1 tbls fresh lime juice (about 1/2 lime, squeezed)
1 tbls ground ginger
2 garlic cloves, smashed
1/2 tsp salt
1/2 tsp black pepper OR white pepper
For the Glaze
1/8 cup pomegranate molasses
1 tbls soy sauce
1 garlic clove, smashed or minced (you can use 2)
1 tbls ground ginger
1 tbls finely grated lime zest (or squeeze of lime)
salt
pomegranate seeds or edamame (or both) for garnish
**can be served with your favorite rice, Armenian rice, or pasta (add calories accordingly)
Combine the soy sauce, olive oil, lemon juice, lime juice, garlic, ginger, salt and pepper in a large, shallow dish or tupperware. Add the salmon fillets and turn to coat. Cover and refrigerate for 1 hour, turning a few times.
Meanwhile, in a medium bowl, mix the pomegranate molasses with soy sauce, garlic, fresh ginger and lime zest. Preheat the broiler.
Transfer the salmon fillets to a large rimmed baking sheet. Season with salt and brush with half of the glaze. Broil 4 inches from the heat for about 3 minutes, until the fillets begin to brown. Be careful not to burn them!
Brush the fillets with the remaining glaze and broil for about 3 minutes longer, until richly glazed and the fish is just cooked through.
Transfer the fillets to plates. Garnish with the edamame and pomegranate seeds and serve with Armenian Rice, your favorite rice, or pasta.
