I prepared my pancake mix for the morning we are going to have buckwheat pancakes
1 cup of organic coconut toasted ~ 280 cals
1 cup of flax seed meal~ 480 cals
1 cup of buckwheat ( made the flour in my food processor)~158
    1 cup of pancake mix~540Cals
plus 2 tablespoons of baking powder
    kosher salt
total cals~1458 and will divide that number by how many I make :)
I will add water in the morning to the mix......These are power packed pancakes! great if you are heading to the gym for a grueling workout.

Sunday mornings are always my homemade low-fat oatmeal pancakes with cinnamon. They are 80 calories per pancake and I have two with a bit of butter and 1 T of syrup. Yum!
  • I normally have a meal bar (@180cals). I don't have time for a breakfast and with food allergies, it takes time to make something I can eat. Weekends I do have a good breakfast.

ok made 16 pancakes at 1/3 cup of batter so roughly about 92 calories a pancake :) every calorie counts sooo no empty calories everyone nutrient packed
  • I usually saute up some fresh spinach, scallions and a bit of grilled protein from leftovers and throw an egg and hot sauce in it.

    This morning's brekkie was:

One egg cooked omelet style with cooking spray, a sliver of gouda cheese (about 1/3 of an oz), 1 slice of bacon, split in half on an English muffin. 260 calorie scaled down version of an Egg McMuffin. Yum!

My breakfast this morning was an omelette made with two eggs, skim milk and 50gms of low fat ham, really filling and carb free!

1 full egg and 3 egg whites - scrambled and topped with salsa, and one slice of plain toasted Nickel bread. Eat it every day for breakfast. That's the one meal of my day that I never have to think about, wish they were all that easy
