Forgive me if this is a repeat topic. I am looking for lunch ideas to take to work. Besides salads, I am thinking leftovers are the way to go.

Oopsie Rolls! I found them on this website

    http://yourlighterside.com/gluten-free-low-carb-buns-aka-oopsie-rolls/

Wonderful website for recipes! I made these the other night and had one for "toast" for breakfast, used 2 for a burger on a bun last night, and will be using 2 tonight when everyone else has pizza, I will take the toppings off of a couple of pizza slices and put them on the rolls for my own "pizza". They only have .6 carbs in each roll!

You could have honest to goodness sandwiches on these things! I will be making more this weekend! If I could figure out how to post a picture on here I would show what it looks like.

I put a picture on my profile if you want to see what they look like.

I agree with the rolls. I make 2 batches (12 rolls = 6 pieces of bread) every Sunday and eat them during the week, usually for lunch. My favorite thing to do is make a club sandwich with turkey, lettuce, bacon and tomato.

Here's some more info on them: http://www.lowcarbfriends.com/bbs/lowcarb-recipe-help-suggestions/549082-original-atkins-diet-revolution-roll-tweaks.html

I make mine with cottage cheese and protein powder and use Muffin Top pans http://www.bedbathandbeyond.com/product.asp?SKU=13145911&COL=0&RN=876

Cut up grilled meat that you've made ahead of time and have a bunch on hand in your fridge...and various veggies. Pepperoni sticks and cheese.

I always cook four portions for dinner despite the fact its just my husband and I.

    He eats two of those.

    I eat one at dinner...

The fourth is for me to take to work the next day..

    Easy peasy!
