    I just opened some cheese for hubby's salad. I din't know that Cracker Barrel Marbled Sharp Cheddar cheese is ZERO carb?! Wow! I know cheese is allowd, but at 4 oz. But that's like awesome!

    I did really really well on low carb, thought I had a better idea (I'll just take a break) and struggled for a couple of years with other programs. but the bottom line is low carb work best for me. I am on induction so have to be careful the first 2 weeks, but for a snack I love to make parmesan chips. I buy shredded parm (not the shaker kind) spread it out evenly on parchment paper/cookie sheet and bake on about 325-350 until done. watch carefully, they go from done to burnt fast. I break apart the sheet and serve with fresh salsa. I also use a small teflon pan and sprinkle the bottom evenly with the parm cheese, melt it, turn it over, cook a minute more, then remove from pan and fold like a taco shell. it make a fantastic taco shell. none of the guilt. all of the flavor. gives a great crunch. for something sweet I use 6 egg yolks beat with heavy cream and splenda to taste, fill 6 half cup custard dishes, set into a pan of water and bake for 45 mins on 350. it makes an excellent egg custard. and has approx 3 carbs. I am excited to dig out all my old recipe books and to learn what is new out there. hope this helps.

    cookies? take 4 egg whites and 1/2 tsp of tartar, beat until stiff, slowly and splenda to taste, you can mound them to make merangues or make them into nests and fill with low carb puddings, etc. store in air tight container. i also add frozen sharp shredded cheese to just the stiff egg whites and tartar, fill a baggie, cut off the tip and make cheat-os. bake at 350 till done. this i found on another message board and are very good. you can season them anyway you want really. I add cheyenne to them for spicey.

    Craving chips? Bake pepperoni slices in the over at 350 for a few minutes. Delish! Nice crunchy snack for tv time when everyone else is eating popcorn, cookies or ice cream! Yum, yum!!

    WOW! There are some great suggestions here! I have done versions of LC before, but I always gave up because I got bored eating the same stuff and I didn't have many resources (Mcpherson). My list of veggies has expanded a TON and these ideas are super helpful. Thank you all for sharing :)

    Sounds delicious! I'll have to try, especially the "cheat-os"!!

    If you boil the cauliflower than blend it up you get a potato tasting soup! Its so delicious you have to try it! Eat it with fish or chicken :)

    OK I posted a recipe a while back but don't see it here, is there a lowcarb recipe board? I might have posted it to that. Anyway, the original recipe called for 2 cups of shredded parmesan cheese and 1/2 cup of almond flour, stirred togetter with some italian seasoning and then cooked in a teflon pan to a crust consistency, flipped and then put on the oven and bake with pizza toppings.

    I didn't like it! I fiddled around with the recipe and made it with 1 cup of shredded mozzarella and 1/4 cup of lc baking mix, mixed together with a little basil then spread out on a nonstick pan (about a 9 inche pan) you spread it and kinda form the outer edge of the pizza crust and when you can, flip it then put on a pan or foil and bake in a 400 degree oven with your toppings. My preferred toppings now are a little pesto, more moz. cheese, black olives, onions, mushrooms and parm on top. The other day I made it with some of those spicy sausage crumbles , not alot, but it was really good. I like it better and think it cooks nicer with the mozz. than the parm in the crust. It bakes about 15-20 minutes, then cool a few minutes on a rack and it firms up to a pizza crust consistency.
    NOT KIDDING HERE, this really works. It's so much better in my opinion than cauliflower or any of the other crusts I've tried in the last 12 years. With the 1 cup mozz and the 1/4 cup bobs red mill lowcarb bake mix, it fits perfectly in a 9 " bake dish, but I like to just cook it on foil to not dirty up the bake dish, then let it cool on a rack for a couple minutes til the crust is nice and firm. Don't even need a fork, in fact you can cut this with a pizza cutter. Love it. OK will shut up now LOL
