Those that use coconut milk in your coffee...

I have only ever used coconut milk from a can in one of two ways..
1 - in cooking where it takes the whole can
2- fridge it - open it scoop out the solids and whip it up to use on berries...
For those who use it in your coffee - do you just scoop a chunk of the solid and plop it in - since after you open the can you need to fridge it and it will separate out?
I have been using so delicious coconut milk from the carton but after the other post about coconut milk I think I shall not use that anymore....
Also an offshoot question - anyone have any idea what to do with the water part if you just use the solid part - just drink it??? (I routinely drink a small coconut water in a tetrapack after my workouts) or anyone have a good way to use it?

I pour the can into a glass jar with a lid (like a sauce jar, or nut butter jar) and shake it all together. Once in the fridge, it's a great consistency for scooping out for coffee.0

I shake up can then pour into a small glass pitcher I have and store in fridge. I don't actually use the coconut milk for coffee. Just small amounts for scrambled eggs usually.0
