Fluff without powders or ice

I made this today and I was pleased with the results. It fluffed up pretty well.
Ingredients:
3 egg whites
1/2 cup cottage cheese (1% fat, no salt added)
1/4 cup unsweetened almond milk
2 servings Jell-o fat free/sugar free butterscotch pudding mix
1/2 tsp xanthan gum
In a stand mixer, I whisked the whites to stiff peaks. In a separate bowl, I used the beaters to mix the cheese, milk, pudding mix, and xanthan gum. It clumped together, but didn't blend completely. Next I attached the beaters to the stand mixer, set it to max, and started spooning in the cheese mixture. I mixed it on high for about 10 minutes, stirring every minute or so to make sure the curds were breaking up. It tasted good, but the flavor wasn't very strong. Next time I'll add some more pudding mix or flavors.
