This is where you add your Mushroom recipes....
I know...it's kinda a vegetable...But I believe it deserves its own category.. it has so many uses!

    You can make a "pizza" with it, my coworker following the Atkins diet gave me this recipe. I like it!


    Ingredients

    1 large portobello mushroom, stem removed
    1 tablespoon spaghetti sauce
    1/2 cup mozzarella cheese
    1/2 tablespoon sliced black olives
    4 slices pepperoni sausage
    1 clove garlic, chopped
    Directions

    Preheat the oven to 375 degrees F (190 degrees C).
    Place the mushroom on a baking sheet, and bake for 5 minutes in the preheated oven. Remove from the oven, and spread spaghetti sauce in the cup of the cap. Top with cheese, olives, pepperoni and garlic.
    Bake for an additional 20 minutes, or until cheese is melted and golden.

    I got to tinkering around in the kitchen and came up with a Spinach Stuffed Portobello Mushroom.... my favorite!


    4 Portobello Mushroom caps
    2 Jumbo Eggs
    1/2 C Bread Crumbs
    2 Large Bags Fresh Spinach
    1 Tbsp Olive Oil
    6 Ounces Shredded Low-Fat Cheddar Cheese
    Seasoning

    Combine 2 large bags of spinach into food processor, pulse until ground.
    Add Olive Oil, Eggs, Bread Crumbs, Cheese, and Seasoning into food processor and pulse until well combined.
    Line baking sheet with aluminum foil.
    Rinse portobello mushrooms and remove stems.
    Place mushrooms on baking sheet, bottom side up.
    Spoon spinach mixture onto mushrooms.
    Place in preheated 350°F oven for 15 minutes.
    Turn oven up to 400°F for another 15 minutes.
    Top with some shredded cheese and broil until golden brown.


    Serves 4.
    Calories per serving: 334
    Carbs: 85grams
    Fat: 19grams
    Protein: 21grams

    Stuffed Mushrooms ohh my!

    Ingredients
    24 whole fresh button mushrooms
    1 tablespoon vegetable oil
    1 tablespoon minced garlic
    1 (8 ounce) package cream cheese, softened
    1/4 cup grated Parmesan cheese
    1/4 teaspoon ground black pepper
    1/4 teaspoon onion powder
    1/4 teaspoon ground cayenne pepper

    Directions
    Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.
    Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.
    When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet.
    Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.

    These are wonderful!!!! After putting all the ingredients in MFP recipe calculator, they were only 19 calories a piece!!!
