Sydney Hiking?

Am planning a trip to Sydney, NSW Australia late Oct - early Nov to visit my WoW guildmates and am thinking of tossing a hike or 2 into my itinerary. Any recommendations for something suitable for beginner hikers (will have 2-3 people with me who have never hiked before) that is still interesting enough that it doesn't seem like a leisure walk in the park?
