Fancy a Lasagne without the carbs? I have just the tip for you.....
Replace the pasta sheets with dehydrated aubergine/eggplant. I would generally take 2 med-large aubergines, thinly slice (5mm thickness), lay on baking sheets and dehydrate on 110 degrees C for 45 - 60 minutes. You want them to be fairly dry but not crisp
This is probably the most orgasmic Lasagne you'll ever have! I have never used it with mince - normally just make a veggie one. Delicious either way, I'm sure!

I love using eggplant , this way but I never thought to dehydrate it, I just quickly pan fried it!
