I found an awesome pizza crust recipe online the other day, I can't believe how fast and easy it is. I just made it and it really does work and hope you'll all try it too. So the pizza crust:
called for 2 cups shredded parmesan cheese mixed with 1/2 cup almond flour, you just mix and then spread in a nonstick frying pan, brown 4-5 minutes on medium heat, then flip and brown the other side. Cool on a rack. It will firm up as it cools. Then you top it with your favorite toppings and then reheat in a 400 degree oven for 5-10 minutes or til everything sizzles and browns up nicely.
I was out of shredded parm and almond flour and didn't want to make a big pizza as my nostick pan is only about 8 inches, so I used 1 cup of lowfat mozzarella shredded with 1/2 cup bobs red mill lowcarb bake mix, followed the same instructions except I didn't have pizza sauce so I used a thin spread of pesto and then another 1/4 cup of shredded mozz and some sliced olives. After it was nicely browned in the oven on a sheet of foil at 400 degrees, I let it sit on the rack for about 10 minutes and the crust did harden up and it was delicious. My version of the recipe came to 458 calories with 13 carbs and 5 grams of fiber or 8 net carbs for the whole pizza (about a 9 " pizza because it fit perfectly in my 9 " cake pan I used to gage the size!) The original recipe for half of the recipe using the parm and almond flour was 585 calories with 15 grams of carbs and 3 grams of fiber or 12 net carbs for the 1/2 recipe.
I have tried a lot of pizza crust recipes and this one was by far the closest and the easiet of all I've tried, and tasted like real pizza crust. I did season the recipe with oregano and basil but the original recipe called for italian seasoning and lawry's. I think you could just make this your own, and the carbs and calories would change based on toppings and pizza sauce. the pesto worked
wonderful for me. TASTE TESTED AND APPROVED so had to share this.
** You can also use the pizza crust for pizza sticks to dip in leftover sauce or croutons for a salad if you like0 -
I made these last night:
KIM'S FLAXMEAL CINNAMON MUFFINS
3 eggs
1/4 cup plus 2 tablespoons oil
1/4 cup sugar free syrup, such as Da Vinci or Torani
2 tablespoons water
1 tablespoon vanilla
1 cup flax meal
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons cinnamon (the amount is correct)
In a medium bowl, beat the eggs with a fork. With a fork or spoon, beat in the oil, syrup, water and vanilla. In a small bowl, combine the remaining dry ingredients, then stir into the egg mixture. Let stand 5 minutes. Spoon into 12 well-greased muffin cups without paper liners. Bake at 350º 12-15 minutes, or until they are lightly browned and seem set to the touch. Remove from the tin at once to cooling rack. Store in the refrigerator.
Makes 12 muffins
Can be frozen
Per Serving: 130 Calories; 12g Fat; 3g Protein; 4g Carbohydrate; 3g Dietary Fiber; 1g Net Carb
They are pretty good - a bit like a bran muffin maybe? They came out tiny though, so next time I will just make 6 bigger ones and double the carb count. Still would only be 2 net carbs. They were super easy to make, too. I had Da Vinci Sugar Free Hazlenut syrup so that is what I used.0 -
