Any food tips for road trips?

Hi all,

We're about to go on a long road trip to visit relatives this coming weekend and I was wondering if anyone had any food tips for taking food with us instead of buying McDonald's, Subway, KFC etc. We've recently gone vegetarian so I'm probably going to have to prepare something in advance that can be frozen. We'll be taking fruit as a given.

    Hi,
    I asked a very similar question. We take motorcycle trips... long ones. They gave lots of suggestions, but I am very restrictive on my diet... still helped a bit.

    @debbylee -- wondering why you eliminated salt? Are you sure you are getting sufficient iodine? My naturopath wants me to use sea salt -- your thyroid needs iodine -- are you supplementing it?

    I quit salt with my first pregnancy (40 yrs ago), when the dr. told me to. Could never add it again, as it makes me puff up.

    Its interesting that you ask, as I have been reading up, and decided to buy some kelp tablets to try... I did ask my Dr. about it, but he kind of poo-poo'd it. Said in this day & age it wasn't possible. Even after I told him I don't eat anything processed, he just ignored it. If you look at my diet plan, the sodium intake is always at least 2/3 under recommended levels.

    On another thread, I was asking about intolerance of heat, palpitations, & now hot ears. One gal thinks my dose may be too high, and I'm on a low dose... She thinks I should push ahead & get tested early. What do you think?

    I'm going to ask to be put on desiccated thyroid (found out that's what is available here), we'll see what he says.
