diced pork recipes

In the supermarket the other day I found 'pork offcuts' (9$ a kilo vs 'diced pork' for 15$). I got a few packages of it, and I'm now kind of stuck about what to make with them. Obviously there is sweet and sour pork, and I just found a bali pork recipe which sounds tasty too (not that I have kecap manis, recipe is here if you're interested - http://www.taste.com.au/recipes/26145/bali+pork )
What else can I make? I'm thinking about something I can do in the crock pot rather than a stir fry of some sort.

Make a pork casserole -- just like with beef or lamb, but pork instead.

It's with mince, but I think it would work with chunks. I actually make up a big batch and freeze in lunch-size portions. Then before work in the morning I pack a quick asian style salad with lettuce, beanshoots, coriander, mint and grated carrot. Then at work I heat the meat and mix through and squeeze some lime over the top. It's easy and quick and seems so much more delicious and indulgent than a regular cold salad0 -

This one! You'll just have to cook it a bit less, since you're using pork bits. I promise it is delicious and you can get away with using a regular coke and cutting the sugar from the recipe. Have it in tacos and sandwiches...or in salady things, or with quinoa.0
