What is your choice of cut when buying beef and why?

    Filet mignon or rib eye. Tender and yummy.

    What is your choice of cut when buying beef and why?
    If I'm buying grassfed beef, then: any and all cuts.

    If I'm buying grain-fed beef, then: the leanest cuts I can find, then cook them in a high-omega3 oil.

    The value of grassfed (and problem with grain-fed) is in the amounts of omega3:omega6 in the fat.

    I love filet mignon! Ribeyes tend to have too much gristle(?) in them.
