Snacks - need ideas

I try to eat a little something every few hours but it seems that the things I like to snack on are higher in carb than I would like them to be. I try to save most of my carbs for my meals since I get so few of them. I typically snack on blackberries, almonds, baby carrots with peanut butter, cheese squares, etc. These are great ideas but I need MORE ideas. I am looking for low carb as possible or as high in fiber as possible. I am only allowed 50 net carbs per day so I have to be careful. What are your favorite low carb snacks?
PS - I have tried the MIM's... either I am doing something wrong or they are an acquired taste because the ones I have made are not good at all.

im not big on MIMs either. ive only done the cinnamon ones and.. umm yeah. lol. but it helps me get in my fiber so thats all i care about. anyway, im just now gettin back on track so.. let me think.. snacks : celery and cream cheese, bbq pork rinds lol, hard boiled egg/deviled egg, a pickle with lunch meat and a string cheese, SF jello cup, pistachios...0

The first time I made a MIM - I attempted a chocolate one. I followed the directions and after eating half of it, I threw it out. I thought FOR SURE that I had made it wrong. I tried again and thought "How can people EAT these???". I may try one of the other flavors - not a sweet one. Maybe that's the trick. LOL0

I make mini fritattas in a mini muffin pan. I put a recipe of mine on the database for a mini ham swiss and artichoke heart fritatta. fairly quick and easy.0

I'm a big fan of whole milk ricotta cheese mixed with a little splenda and some lemon zest (or lemon extract if I am in a hurry). Hard salami or pepperoni are also very good with a little cheese. This sounds weird but a little bit of pate on cucumber slices is good. Trader Joe's has an excellent mushroom pate.0

Switch your baby carrots out for celery. Make sure your peanut butter is natural (just peanuts and salt (or unsalted)). My favorite is Trader Joe's. If you find it to be totally gross, add some Splenda to your peanut butter.
Plain Greek yogurt with Splenda and berries is a ton of protein. You don't really need berries if you can't afford the carbs.
Broccoli, cherry tomatoes, cauliflower and cucumber are all great dipped in to ranch dressing.
For a crazy good fibery snack take some Trader Joe's peanut butter and mix it in a little bowl with Splenda and flax meal. Chop up a few squares from a sugar free chocolate bar (from Trader Joe's lol) and add it. So delicious and with the peanut butter and flax meal - pretty healthy!
Since I'm sending you to Trader Joe's, you can get some Soy & Flaxseed Meal Tortilla Chips. I think it's like 6g net carbs for 7 huge chips with a ton of fiber (6g). the "spicy" ones taste just like Doritos. Dip them in any sour cream based dip you want, or if you want even more protein make dip from Greek yogurt.
And if nothing else...I love the Atkins protein bars. My favorite is Chocolate Peanut Butter which has 240 cals and 19g of protein and it is as filling as a meal. I've done a lot of shopping and the cheapest place to find any Atkins bars are Wal Mart and Target. Try to find the ones you like with the most protein. Do be wary of sugar alcohols and what the bars might do to your tummy.
Always try to have as many grams of protein and then fat in your snacks. And drink lots of water!0 -
An idea for the MIM...use golden flax meal instead of the dark flax, it makes a huge difference in the flavor. I like the chocolate with some whipped cream sprinkled with a touch of sweetener.
and I really like Lupini Beans. These are beans that I order online (http://nuts.com/cookingbaking/beans/lupini.html?gclid=CMzpofP29q8CFQ0q7Aod2Vs1Tg) we always had these at Christmas time when we were kids. They have about 30 calories for a quarter cup, 3g each of fiber, carb, and protein.
Directions to make them are at the website above. To eat you bite off the skin and pop the bean in your mouth, a very nice substitute for peanuts.0 -

I discovered something wonderful - Josephs Oat, Flax Lavash bread (1/2 of one flatbread is a serving but they are BIG). If you warm it up a little in the microwave, spread some whipped cream cheese, and some 50 Fifty sugar free raspberry preserves on it... OMG, it is so good. The warm lavash melts the cream cheese a little. It tastes like cheesecake or a raspberry blintz or something. It is absolutely wonderful and tastes like you are being SO bad!!! Its about 115 calories depending on how much filling you use, 7 net carbs, and 7 g protein. So yummy!0

I love to make cheese chips and eat them with an all natural salsa. Just fry mozzerella or Italian blend (mozz, parm, ricotta) in little discs for a couple minutes each side. Perfect!
This also makes an awesome pizza. I make it the size of a plate (very thin, no more than 3 oz) and lightly dot on salsa, lots of garlic powder and italian seasonings, mini pepperonis or ground Italian sausage and veges. The key is very thin layers of everything and, believe it or not, the cheese crust holds up! Even my carb eating friends love this one!0 -
Cream Cheese Dip:
1 package cream cheese at room temperature
1 medium cucumber, with seeds removed
1/2 pound of bacon ( fried and chopped into bits)
1/2 onion, diced
Mix ingredients together and allow to sit for about 3 hours for flavors to meld together. Eat on top of a tomato slice, or use pork rinds. It can be used as a sandwich spread, and wrapped in lettuce. This stuff is SO good!!!!
