Recipes using Coconut flour. Just like flour..sort of...

I've been making variations on the muffins that have been posted. Bless the original poster and every one that has contributed.
Coconut flour Muffin,
1 egg
2 T coconut flour
1 t baking powder
1/2 t butter
2 T splenda, Trivia or whatever.
And then whatever you fancy, blueberries, pumpkin, 1 T of flax plus cinnamon, etc.
Grease the coffee cup and microwave 1 to 2 minutes depending on the moisture level of your added ingredients.
I've used 1/4 a scoop of chocolate whey (8 grams) 1 T of this really excellent coco I bought at whole foods and 1 tablespoon of crushed 85% dark Lindt chocolate and made a chocolate chocolate chip muffin that's killed cravings! (with the chocolate-you need to add some soy or almond milk to the batter and it needs to be nuked longer, by 1 extra minute.
Next I got this recipe from my healthclub's magizine. They have a wonderful cafe and excellent recipes:
Fritters:
They use carrots and I made these today and tomorrow I'm going to use bacon and cheese.
1/4 c Coconut flour
1/2 t baking powder
4 eggs
1 cup of tightly packed grated carrots
1 T of grated ginger
Make 1" flat patties and fry. Makes 16 fritters.
1/2 c of oil
Fry at 350 F for two minutes on each side.
They really made a great substitute for bread or potato pancake like foods. Even with carrots the carbs are like 5-6 (NOT NET)
Coconut flour absorbs more moisture than flour and it won't rise with yeast (trust me). It rises very nicely with more eggs and backing powder than one would normally use.
