    I made a 7 layer salad today for the weekend's camping trip. It's 5 carbs for 1 cup. I just googled 7 layer salad and lots of recipes came up! I will be making this again!

    One of my favorite easy fixes for a chocolate craving:

    cream cheese
    unsweetened cocoa powder (to taste)
    splenda (to taste)

    mix together! that's it.

    My favorite breakfast now!

    1 egg
    1 zuccini OR Squash
    shredded cheese (optional)

    Shred the zuccini with a gheese grater
    Mix in one egg
    Heat a tsp of oil in frying pan and drop in spoonfuls of mixture, flip when edges are brown.

    I also do this with 1 yellow squash.
    Nice low carb fast breakfast!

    Has anyone tried the MIM (muffin in a minute)? I made a chocolate cake one last night & it was really good. Flax has a lot of fiber so it cancels, or almost cancels, out the carbs.

    Here's the recipe:

    1/4 cup flax meal
    1/2 teaspoon baking powder
    2 pkt splenda
    2 teaspoons unsweetened cocoa
    1 large egg
    1 teaspoon butter

    Put the dry ingredients in a coffee mug.

    Stir

    Then add egg & butter

    mix

    Microwave 1 minute ( i had to do it 55 sec since 1 min was too much)

    This really fixed my craving for chocolate something & the fiber is nice too.

    Per serving: 235 calories; 18g fat (63% calories from fat); 12g protein; 11g carbohydrate; 223 mg cholesterol; 284 mg sodium

    I found these are more like 3 or 4 carbs when I put the ingredients in the recipe maker. I think I will halve them from now on.
