Vietnamese Lemongrass Recipe

Chicken Lemon Grass

serve this dish with Steamed rice

you'll Need:

-1 lb. Chicken breast and /or boneless thighs cut into small pieces
- vegetable oil
- lemongrass
- 1-2 garlic cloves minced and chopped very fine
- Chinese five spice
- granulated sugar
- fish sauce I use sqid sauce
- soy sauce
-hoisin sauce
-lemon wedges
- chopped green onions

Garnish:
- cucumber thinly sliced
-cilantro
-lemon wedges
- hoisin sauce

if you don not have a wok use a large skillet

Heat Wok/ Pan until it begins to smoke ( this is the key to any good stir fry)

drizzle wok with oil
add chicken to the hot wok ( do not over crowd pan)
cook chicken through then remove meat from pan

drizzle pan with oil
add lemongrass, garlic
return chicken to wok/pan
season with 2-4 dashes of Chin. 5 spice, tsp. Sugar
add fish sauce
then a few dashes of Soy Sauce
add spoonful of hoisin sauce
add green onions
add the juice if half a lemon to deglaze the pan
stir then add cilantro stir again and serve

Plating:
plate Chicken Lemongrass garnish with fresh cilantro,cucumber, and lemon wedge

at the table you can add more hoisin sauce and red pepper flakes or Asian hot sauce
