Using your leftovers...

Ok, so we do a lot of leftovers at my house and I have been looking for ways to keep dinner fresh while using some of the same ingredients. Hope you all have some great ways to add to this!
So I got a couple days out of a chuck roast I crock potted. First day I shredded it over rice with broccoli and seasoned the whole thing up. Tonight I used the rice and roast in a whole wheat wrap, grilled up some mushrooms and tomatoes, and added some red lettuce and salad dressing. The wrap was less than 300 calories!!!
Also, I made kabobs earlier this week with sirloin and tons of veggies. I obviously used the mushrooms and tomatoes, but I am going to use the other sirloin to make a stir fry tomorrow night.
