TDEE - Activity level?

I really am not sure what to put as my activity level. I work a desk job but am up and around the office throughout the day. I also have a toddler so my evening is spent playing with him and cleaning up. My work out schedule varies...sometimes I may get in a few workouts a week, others none at all. I figure i have 3 options:
Set TDEE using sedentary then eat back my calories from workouts
Set TDEE using 1-3 hours of light exercise then eat back calories from workouts
Set TDEE using 1-3 hours of light exercise
I would do a 15% cut under all these scenarios i think...?
Which do you think is the best way to go? I've been eating more for about 5 weeks. BMR is 1983. I started eating about 2500 cals a day and gained 8 lbs within a couple weeks. I've lost 2 lbs the last 2 weeks now eating at a little over 2000 cals plus eating back exercise cals.

Hello,
For the first 6 - 8 weeks I would set your TDEE using Light Activity. At the end of 6-8 weeks, if things are going well or not you can re-evaluate where your TDEE numbers are at and make adjustments
