Ok...I just have to share. I just finished an AMAZING dinner. Fresh steamed asparagus, grilled chicken and cauliflower "tater" tots. Strange sounding I know, but they are 17DD approved and they are really tasty.

I wasn't able to make them into tater tot form - they wouldn't stick together, even after squeezing all of the moisture out. I used a mini muffin pan and mushed them in. They turned out crispy and had the same consistency as a real tater tot!
Also, I made a crust-less, sugar free, low carb (almost carb-free) cheesecake. We're having it for desert. If it was a success and you're interested I'll post the recipe.
