Maple Curried Prawns

1 tsp coconut oil
1/2 cup Red Onion, Chopped
1/2 cup Red Bell Pepper, seeded, chopped
1/2 cup Yellow Bell Pepper, seeded, chopped
1/2 cup Green Bell Pepper, seeded, chopped
1 tbls Garlic, chopped
2 tbls Maple Syrup
3/4 cup Coconut milk Lite
4 tsp Curry Paste, Red
7 oz Shrimp, raw
4 oz wheat free spaghetti
Heat oil in skillet over medium heat, add onions and peppers and cook until onions are soft and translucent. Stir in garlic, cook, stirring for about 3 minutes, then stir in maple syrup, and cook for about 5 minutes, until caramelized. Stir in Curry paste and milk, bring to a boil, then reduce heat to low. Simmer uncovered for 10-15 minutes, or until sauce reaches desired consistency. Add shrimp, cook for 3 more minutes. Serve immediately over pasta. Wine: Pinot Noir, if you are so inclined.
