I tried this recipe today and it's really really good!

No beans--I made the garlic version.
I did not do all the calculations so I don't know how low carb it is but for a treat and if you're missing hummus may be worth a try.

Did you have any issues with it becoming watery? All the water in the zucchini usually draws out when you add salt to it. But, sounds good! I also recently heard of making hummus with califlower.0

Just a very little bit. I didn't look at it today though:)
I taste tested it on my nephew and brother in law. One has never had hummus and he said it was very good. The other said it was EXACTLY like hummus. It really has a similar taste and I think the paprika gives it the color of the chickpeas .
I'm going to try it again sometime with other hummus recipe variations and see how it turns out:)0
