Nine days recipes?

Hi, everyone. I hope those of you fasting had an easy fast, and didn't crash at 4 PM like I did.
I was hoping people could give me some good vegetarian recipes for the 9 days. I can't eat raw cabbage or too much soy, and my boyfriend doesn't like fish. On top of that, I live in Israel and have no air conditioning, so something that doesn't heat up the house too much would be great.
Of course, people should feel free to also post recipes for tofu-encrusted fish over raw cabbage that others may benefit. But I figured, since I'm posting, that means that I can make special requests. :bigsmile:

do you have a slow cooker? you could make beans over night.
what can't you eat? besides meat or chicken, of course.

Keep a container of brown rice in the fridge, it makes a really filling base for any dish. Then, I like to dry fry onions, tomatoes, zucchini, red peppers with some salt and pepper. For protein you could add a couple of eggs, or some smoked fish fillets.
I also love making sushi salad. 1/2 cup of brown rice, 1 diced cucumber, 1 diced carrot, 2 sheets of nori torn into squares, 1/2 avocado. Douse the whole thing in equal parts rice vinegar and red wine vinegar plus some sweetener and some salt. If you want to add some fish or tuna with light mayo you can. Serve with pickled ginger and lots of soy sauce. Beteavon!!0
