Hi I am new to the group and would Love to know your simple low carb recipes...I have been doing the low carb for about 3 months and I just eat the same thing day in and day out...I am starting to crave variety...I am super busy and work into the evenings so I am looking for simple (no exotic ingredients I live in a very small town) and quick meal ideas and recipes.... If you are willing to share I would appreciate that so much Thank you

    Before I recommend anything, could you be more specific. It would help greatly where what your definition is could greatly vary from the others here...

    What is your definition of 'simple'...

    What is your definition of 'exotic'....

    Wow, you odviously took some time out of your day to google my town, I was not looking for resources for food items though...I was simple looking for quick easy to whip together recipes....Things to make myself for supper after I get home from a labour intensive job, recipes that are quick and easy to make that do not require crazy ingredients that I would possible have to get from a health food store...These are what I was meaning by "exotic" "Simple" would be something I can throw together in a crockpot or make up in the span of 15-20 minutes..

    I type over 105WPM, t'wernt nuttin! LOL! I am aware of that however, these are great resources to consider when you are out and about.

    Unfortunately "Simple" isnt really a word with anything 'low carb' to be honest. There will be food prep involved unless you have the money to purchase everything pre-cleaned/prepped/bagged. You can easily throw together a stew in the crockpot that doesnt have corn or potatoes....or any of the other bad-carb choices.
    These are what I was meaning by "exotic" "Simple" would be something I can throw together in a crockpot or make up in the span of 15-20 minutes..

    Try to find some time, perhaps a Saturday or Sunday to do some food prep for the next few days.. or even better: cook in bulk and freeze individual meals. That way, you will have a variety to choose from during the week.

    15-20 minutes is just not "doable" when you take into consideration the prepping involved and to make sure you are cooking to appropriate temperatures.

    That crockpot is probably going to be the only thing you are going to be able to do unless you can put some good time-management in to do some bulk cooking either on the weekends to get ahead, or perhaps you and your family sharing the cooking duties that way you will actually get a full and complete meal.

    Any of the suggestions I was going to share dont fit into a 15-20 minute time span because low-carb intakes generally mean fresh foods only and that takes some prepping to do.

    Perhaps you could look at how you could arrange for better time management?

    "Exotic" to me would be the authentic Asian dishes Im normally accustomed to preparing/consuming (foods that no non-asian would even dare try)...

    You can defintely get dinner together in 15-20 minutes if you do your prep on the weekends. Some things I like to do to throw together easy meals and have snacks on hand--

    -Keep up a salad made up in the fridge. I cut and wash my lettuce and veggies and keep it in a covered bowl.
    -Keep canned tuna on hand, and make up a tuna salad over green salad for something quick.
    -Cut up veggies (celery, cucumber, whatever you like) to keep in fridge.
    -Butter lettuce is good to have on hand too for wrapping around meat or tuna (Asian style lettuce cups are good).
    -A quick pizza on a low carb tortilla.
    -Roast a big pan of veggies at the beginning of the week.
    -Cook chicken or pork or whatever in the crockpot and eat off of it for a few days.
    -Grill chicken breasts once or twice a week so they're always on hand.

    Thank you... I usually cook up 3 chicken breasts and then eat those for 3 days at a time...I will def be checking out your Pinterest boards

    I'm not sure what type of low carb diet you follow, but this blog is great for South Beach. I've made quite a few recipes from here:

    I highly recommend the Hungarian Pot Roast (a crock pot recipe) and the Pesto Chicken (cooks up in 20 min).

    Even if you don't follow South Beach I'm sure they are adaptable. The website has a lot of great recipes, I've been hooked.
