Bab's Cucumber Avocado Black Bean Salad

Getting lot's of questions about this one tonight. If you have an abundance of fresh veggies in your garden, as I do, this one is a keeper. It is a nice change from a typical "lettuce" salad. This recipe is so flexible, but here is the general concept.

1 large chopped garden tomato (or cherry tomatos cut in half)
3-4 sliced pickling cucumbers (or whatever kind you have or like)
1 peeled and diced avocado
zest and juice of one lime (lemon also works if you wish)
one grated garlic clove (or as many as you like)
some thinly sliced red onion or shallot
some chopped cilantro or parsley
some drained and rinsed black beans or whatever other beans you like (I use Reinzi brand as they are lowest in sodium)
a few grinds of cracked black pepper
a few dashes of sriacha (or any other hot sauce you like)

Prepare about an hour before serving, refrigerate and serve cold. This is plenty for two with a little left over for lunch~
