My husband and I try very hard to eat whole foods and avoid meat but I have a really hard time when it comes to preparing a hearty dinner that is filling and healthy. The nearest grocery store where I can buy organic/whole foods for a reasonable price is about a 30 min. drive so I only make it there once a week. When I get ready to cook, I seem to be out of what I need or the veggies have gone bad. Looking for advise on how to shop smart and prepare easy and tasty vegetarian dishes that my family will like, especially my 6 and 7 year old.
