Egg Muffin question

Hello, new to Paleo and starting off slow. I did try to make the egg muffins and they are very yummy! Mine fell in the middle and stuck to the pan horribly. Any ideas? Should I just use butter to grease the pans? I appreciate any insight you can give me. Thanks!

    If you're including butter in your version of paleo, then use, use it to grease the pans. Otherwise use either softened coconut oil or just some cupcake/muffin liners.

    I bought some silicon muffin cups at IKEA. My last foray stuck so bad that I ended up tossing the whole pan (literally, couldn't get anything off, despite a lot of coconut oil).

    I use a silicone muffin pan but still grease it pretty good. You can also get cupcake liners and put them in the pans

    I found coconut oil spray. Seems to prevent sticking.

    With the cupcake liners I put a little dollop of butter or olive oil in the bottom of the liner, then add the eggs mix. Haven't had a sticking problem. There's actually an oil mister thing called a Misto I saw on Amazon I was thinking of buying. You add your own oil (olive, coconut, whatever) and it turns it into an oil spray. It'd be perfect for stuff like this I think

    I have a misto and definitely love it. It does work for most applications like this very well... just not in the egg muffin instance for me.

    I use silicone liners and give them each a spritz with coconut oil spray. The muffins just slide right out.

    FYI, if anyone wanted a Misto, it's up on Groupon Goods. I think that the price is comparable to Bed Bath and Beyond without a coupon, but you get extra stuff with it (peeler and lettuce knife).
