How do you make your Atkins work for your family?

Many years ago I did Atkins successfully. What made it easy for me was that my partner worked nights so he wasn't home for dinner. He ate at work so I didn't have to worry about saving him a plate or anything. My daughter was very young so she didn't realize we had slightly different plates.

Now my partner is home for every dinner. He does not follow a low carb lifestlye, nor do I expect him to. It's really hard to come up with tasty meals that I can afford for three people. He totally wouldn't mind eating steak every night.

If you have to feed a family...what are your favorite meals that don't cost an arm and a leg and your family doesn't think is 'diet' food?

    You can do it! Every meal I make (3 meals a day X up to 8 people who need tons of calories due to their ranch work load) I think of me first.

    Taco salad add hot tortillas, beans and rice.......
    Bunless Burgar obvious
    Fajita Meat/ salad add tortillas
    Sausage, eggs add gravy (I fry up sausage, before making gravy I pull some for me) and biscuits
    BLT salad add toast for sandwiches

    Just think of your protein choice, then build simple stuff around it. Tonight we are having chicken parm. I fried up my chicken without the breading, put it in a separate pan and dumped some sauce and cheese on both. They got the traditional version.
