Easy Chicken Paella

Hi all, I made this tonight and it was so simple and the portion size is really generous for those of you who like to eat, like me:)

Easy Chicken Paella:
(serves 4)

1) 1 bag of of Vigo yellow rice (10 oz bag)
2) 1 chicken breast about 6 oz (cooked)
3) 1/2 cup (125 grams) of young, petite, peas

Pour the yellow rice into a rice steamer and set timer for 20 mins (or cook it on the stove) -- add about 1/2 cup of extra water to the recommended amount and don't add the optional fat. When it is done pour it into a large pan on low heat on the stove. Chop the cooked chicken into small bite size pieces and add to the rice. Finally, add in your peas. Stir for about two minutes over low heat and add salt and pepper as desired.

The whole mixture serves four and breaks down this way calorically (though you should probably weigh and measure yourself if you want the exact numbers for your chicken breast etc...)
